I was at Citrarasa 2009 on Sunday and came across this "demo" of frying Penang Kuey Teow!
The flame was huge and fierce and heated the wok up until very hot...
Cooking oil was introduced and instantly it caught fire...
Then kuey Teow was "thrown" into the flaming wok ... (By the way, do you see the "fire" on the forehead of the cook? This bit is a "break away" fire demonstrating the intensity of the flame!)
... fry and fry or rather stir and stir ...
Added in soy sauce and fry again...
... then a little oil was poured onto the side of the wok to purposely allow more "burning"-the orange flame was from the burning oil.
... see! The fire was inside the wok, and the burning oil was then mixed into the kuey teow ...
... steaming hot ... done...
The steaming hot kuey teow is then transferred to the polystyrene food container.
Served for RM5 per package.
After seeing the way it is fried, I will think twice when coming to eat kuey Teow fried in this manner. The super heated oil is no good for health. By purposely burning the cooking oil, it gave that "charcoal" taste. Burnt cooking oil and food is carcinogenic - ie, cancer causing.
The whole process takes five minutes.
Note: I am going to Kuching tomorrow (1-April-2009). Unless there is computer network, I will not be updating my blog. I am bringing my Ah Jon to Kuching for further investigatory medical. Please do pray that there is nothing wrong with him.

Having grown up in Penang and eating Penang food all my life, I have honestly never seen Penang Fried Kuey Teow fried like this in Penang. This guy is a wannabe. I have the original Penang Fried Kuew Teow recipe and would be glad to cook for you when I am back but would need some pork fat. As for Ah Jon, my prayers are with him, believe and have faith that everything is okay and God will ensure that.

My best fried k.t. has never been cooked like this.
I would think that this is rather alarming and non-secure kind of cooking and may result in some hazards....very hazarduous and should not be emulated at all by housewives and youthful aspiring chefs.
Cook safe and keep the homes safe.
AS for Ah Joh may God bless him with good test results. May the good Lord be with your family in Kuching.

there is no one way to fry so-called penang kueyteow, i been to penang too, there is many type, the common famous one are fried with salted egg on charcoal, and the one with sea clam. each has their own way :) but there is a lot wanna-be or people who wants to convince thier sytle are the one/original. (pass down recipe? or traditional? who knows?)
WT: once in a long time eatin these burned kueyteow, i think is okay, there is another 'penang fry keuy teow' at century (ex choon chong) there, but is melay style(not chinese) a little spicy but a new 'taste' to try :) delicious :D

Hm... i never been to any big food festival in Miri, but since i;m going to penang tonight i go eat kueh tiaow goreng...

you must have been standing there with your camera for a long time!! I don't think I want to eat the charred kueh tiaw!! Penang or not....I think some of the kueh tiaw in Kuching is much much better. Never re use oil. Not healthy -at least my mum told me that.

I was standing there for some 7-10 minutes. But I wasn't using any flash, so they are not disturbed.
Overheated oil is no good to reuse. So, don't use too high a temperature.
